Savory Saturday- Slow Cooker Cheesy Ravioli Casserole

This is a kid favorite in my house and since it is a slow cooker dish it makes it a Mom favorite too!

Slow Cooker Cheesy Ravioli Casserole

1 Tablespoon Olive or vegetable oil
1 Medium onion
1 large clove garlic, finely chopped
2 jars of 4 cheese flavored tomato sauce (26 oz each)
1 can 15 0z tomato sauce
1 teaspoon Italian Seasoning
2 packages frozen beef ravioli (25 oz each)
2 cups shredded mozzarella cheese
1/4 cup fresh parsley chopped

1. Spray 5-6 quart slow cooker with cooking spray
In Dutch oven or 12-inch skillet, heat oil over medium heat until hot. Cook onion and garlic in oil about 4 minutes, stirring occasionally, until onion is tender. Stir in pasta sauce, tomato sauce, and Italian seasoning.
2. Place 1 cup of the sauce mixture in the slow cooker. Add 1 package frozen ravioli; top with 1 cup of the cheese. Top with remaining package of ravioli and 1 cup cheese. Pour remaining sauce mixture over top.
3. Cover; cook on low heat setting 5 1/2 to 6 1/2 hours or until hot. Sprinkle with parsley before serving.

I love slow cookers and good food that can be made without much effort. This opens up time for the kids and I to catch up about the week and still eat dinner at a reasonable time.

Note: I used pizza blend cheese rather than plain mozzarella. It can be made to personal tastes. I try to dress up the jarred sauce a bit with my own add ins such as more garlic than the recipe calls for. It makes it seem more our kind of meal. I also serve with hot garlic bread.
